Chipotle Steak, Bacon & Pineapple Pizza

A bold, global twist on the sweet and spicy flavor profile, this pizza combines smoky chipotle sauce with juicy steak, crumbled bacon, Del Monte® Pineapple Tidbits, green peppers, and red onions, finished with a sprinkle of fresh cilantro.

Ingredient Measure
Chipotle Peppers in Adobo Sauce, pureed 3 Tbsp
Contadina® Fully Prepared Pizza Sauce 1 1/2 cups
Skirt Steak, well-trimmed, seasoned with salt and pepper 1 lb
Salt and pepper As needed
Pineapple Juice (reserved from pineapple tidbits) 1/2 cup
Chipotle Peppers in Adobo Sauce, pureed 2 tsp
Pizza Crust, par-baked or House Dough, 12" 4 each
Chipotle Tomato Sauce (prepared according to directions) 2 cups
Mozzarella Cheese, Shredded 5 cups
Del Monte® Pineapple Tidbits in 100% Juice, drained 3/4 cup
Peppered Bacon, crumbled 1/2 cup
Green Peppers, 3/8" dice 6 Tbsp
Red Onion, 1/4" slivers 6 Tbsp
Cilantro, freshly chopped 1/4 cup

TIPS

If you don’t stock chipotles in adobo sauce, season pizza sauce with ground chipotle pepper.

Par-cooked, diced steak on a pizza will be fully cooked and could be dry and tough. Using a well marbled cut like skirt steak or ribeye and soaking in sauce or juice will retain moisture. Commercially prepared steak pizza topping is often tenderized and injected to stay tender and juicy when cooked again on a pizza.

Other meat options to consider are diced chicken thigh meat as well as fully cooked and pulled braised beef chuck or slow smoked pork shoulder.  

Directions:

  1. In a bowl combine and whisk the chipotles and pizza sauce.
  2. Grill steak to medium. Allow to rest and cool slightly.
  3. In a bowl, combine and whisk the reserved pineapple juice and chipotle puree.
  4. Dice steak to ½” pieces and toss with the seasoned pineapple juice. Hold refrigerated for service.
  5. Pre heat oven to 425°F.
  6. For each pizza, spread crust with ½ cup sauce leaving a ½ “edge. Cover sauce with 1¼ cup cheese.
  7. Top pizza with 1/3 cup pineapple, 3 tablespoons bacon, 2 tablespoons green pepper, and 1½ tablespoons red onion.
  8. Bake for 10 minutes until cheese is fully melted can crust is crisp.
  9. Cut into 6 wedges, sprinkle with 1 tablespoon cilantro. Serve 2 slices.
