Korean-Style BBQ Pineapple Short Rib Sliders

These craveable Korean-style BBQ short rib sliders are simple to prepare but deliver big flavors. They are topped with a sweet and savory pineapple jam made with Del Monte® Pineapple Tidbits. A delicious global mashup that makes a great shareable appetizer for game days.

Ingredient Measure
Olive Oil 1 Tbsp
White Onion, diced 3/4 cup
Del Monte® Pineapple Tidbits in Juice 1 cup
Del Monte® Pineapple Juice 3/4 cup
Turbinado Sugar 1/3 cup
Fresh Thyme, leaves 2 Tbsp
Salt to taste (1/4 to 1/2 tsp)
White Pepper to taste (3/4 tsp)
BBQ Short Rib, prepared, pulled, held hot for service 1 1/2 lbs
Korean BBQ Sauce 1 cup
Hawaiian Slider Buns 20 each

TIP

If the cost of short ribs is too high for your operation, a perfectly braised beef chuck is a close substitution.

There are two styles of Korean BBQ Sauce menued in America. The West coast style is a sweet, dark and thicker sauce and the East coast NY Style is a much spicier tomato and pepper red sauce. This recipe is nice with both styles of sauce.  

Directions:

Pineapple Jam:

  1. Heat oil in a saucepan over medium high heat. Add onions and sauté for a few minutes until tender.
  2. Add pineapple tidbits, pineapple juice, sugar and thyme.
  3. Stir frequently and simmer for up to 20 minutes until reduced to a thick, warm sauce. Add salt and pepper to taste.
  4. Remove from heat and cool.

To Build Short Rib Sliders:

  1. For service, combine the pulled short ribs with sauce and hold hot for service. Assemble sliders to order by toasting 2 buns.
  2. Fill each bun with 1½ to 2 ounces of sauced meat on the heel.
  3. Drizzle with additional Korean BBQ sauce if desired.
  4. Spread the crown of the bun with pineapple jam, then place on top of the sauced short rib and serve.
