Pear Feta Vinaigrette

This refreshing light Mediterranean-inspired dressing combines the subtle sweetness of pears with the tang of feta and Greek vinaigrette for a perfectly balanced, creamy dressing.

Yield 2 1/2 cups

Ingredient Measure
Del Monte® Sliced Pears in 100% Juice 1/2 cup
Pear Juice (reserved from pears) 1 cup
Feta Cheese 1/3 cup
Italian or Greek Vinaigrette 1 cup

TIPS

This speed-scratch recipe can be made more intense in flavor by increasing of the ratio of vinaigrette dressing. The addition of a hint of Dijon adds a European touch.

Try other light vinaigrettes like lemon, champagne or a simple house made olive oil and white wine vinaigrette.

The solids and fat in the feta blended with liquids helps emulsify the dressing. 

 

Directions:

  1. In a blender, combine pears, pear juice and feta. Blend on high until smooth.
  2. Add vinaigrette slowly and puree until emulsified. Hold refrigerated for service.
