Pineapple Ginger Mint Spritzer

A refreshing mocktail that includes Del Monte® Pineapple juice and a mint ginger syrup, topped with a splash of seltzer.

Yield 1 Serving (7 oz over ice)

Ingredient Measure
Water, bottled 2 cups
Sugar, granulated 1 cup
Ginger Root, raw, coarse chopped 1 1/2 Tbsp
Mint, large fresh sprigs 3 each
Del Monte® Pineapple Juice 1/3 cup
Del Monte® Pineapple Chunks, to garnish (optional) 3 each
Ginger Root, raw, 1" think slice 1 each
Mint, fresh sprig 1 each
Orange wedge, 1/12th cut 1 each
Mint Ginger Simple Syrup 1 Tbsp
Seltzer 2 Tbsp (1 oz)

TIP

Can also be made into a cocktail by including desired white spirit such as rum, gin or vodka.

In a bar setting, if the orange has been peeled for other cocktails, the wedge is fine to use on this spritzer.

Directions:

Mint Ginger Simple Syrup

  1. To make the mint ginger simple syrup: in a 2 qt. saucepan, add water, sugar, ginger root and mint.

  2. Bring to a boil briefly. Stir the contents to blend and allow to simmer; the sugar must dissolve and the water must reduce by 25%.

  3. Remove from heat. Strain syrup to remove any debris of mint and ginger.

  4. Allow to cool and place in squeeze bottle to dispense.

  5. Yield 1 1/2 cups

 

Pineapple Ginger Mint Spritzer

  1. To make each Spritzer: Deposit the 1” thin slice of ginger, mint sprig and orange wedge with skin on into a shaker cup and muddle gently.

  2. Add simple syrup, pineapple juice and a few rocks of ice. Cover the shaker and shake vigorously.

  3. In a fresh rocks glass with new ice, strain the shaken contents into the glass and top with a splash of seltzer water.

  4. Garnish with a sprig of mint and chunks of pineapple.
