Pineapple and Red Hatch Chili Glazed Salmon

Salmon is cedar plank roasted and basted in Del Monte® Pineapple Hatch Chili Sauce and served over cilantro lime infused rice with griddled onion, poblano peppers, corn and diced tomatoes.

Ingredient Measure
Salmon Filet 5 to 6 oz.
Salt and pepper with a hint of ground chipotle pepper and brown sugar To taste
Del Monte® Pineapple Hatch Chili Sauce to taste
 

Directions:

  1. Season and baste salmon filet.
  2. Prepare salmon using usual method.
  3. Plate with Cilantro Lime rice, julienne red onion, Del Monte® Golden Sweet Whole Kernel Corn and Contadina® Diced Tomatoes.
